With a light and refreshing profile boasting notes of elderflower, honeysuckle and citrus zest, the moderate acidity and subtle tannins of Sfera’s Macerato make it an ideal choice for warm-weather sipping or pairing with Finocchiona: the acidity cuts through the fat of the salami, whilst the floral and herbal notes complement the fennel flavour without overpowering it.

Savigni:
Nestled in the Tuscan-Emilian Apennines near the town of Pavana we find the family run Savigni farm. Set up in the 1980’s by Fausto Savigni and his two sons, they pride themselves on overseeing the whole journey from Organic farming to butchery.
Their Finocchiona is made entirely from the meat of DOP Cinta Senese pigs, giving it a rich dark colour and high fat content. Prepared with delicate wild fennel, creating a beautifully balanced salami with a sweet and slightly earthy flavour that helps to cut through the juicy fattiness of the meat.
Sfera:
Sfera is a collaborative project that partners with small, certified-organic vineyards across Italy to create limited-run wines. The name « Sfera » translates to « sphere » in Italian, symbolizing their mission to bring « cosmic verve in a litre bottle from the Alps to the Mediterranean ».
The Macerato is crafted from 100% Verdeca grapes, an indigenous variety to Puglia. These grapes are grown in clayey silt soils at an altitude of 350 meters in Acquaviva delle Fonti, near Bari. The cool, elevated location contributes to the wine’s freshness despite the region’s warm climate. The wine undergoes 14 days of skin maceration, offering subtle tannin and a herbal complexity.
